Greetings from Utah! As I previously mentioned, I am currently in Park City, UT, spending the week tucked away in the mountains with my friend Ellie. Here are 5 interesting things that happened this week!
- At the airport Sunday I had the interesting experience of having my tuna taken from me in security. As someone that ALWAYS packs food for both the plane ride and the vacation (to save money while I’m there lol), to have my tuna taken from me felt like a direct blow to the face.
- On Tuesday my friend and I decided to go for a hike along the Blood Lake Trail. This very well known trial is a must-see in Park City so we dedicated the afternoon to hiking it. The interesting part of the story is that we had to take an uber to get there and the uber, for some unknown reason, decided to drop us off 2 miles from the trailhead. 2 miles! Even though his uber maps directed him to keep driving. So this led to me and Ellie walking alongside a fairly trafficked windy road for about 30 minutes just to get to our trailhead. Not the ideal situation.
- I had one of the best shakshuka of my life this week at a little restaurant called Five5eeds. If you don’t know what shakshuka is, it’s essentially sausage and egg in tomato sauce in a small cast-iron skillet. Look it up. Anyways, I enjoyed a fantastic breakfast while working that morning until we got kicked out of the restaurant for spending too much time there.
- We went on a beautiful run on Wednesday (a measly 4 miles) that made me fall in love with mountains a million times more if that’s even possible. I try to make most of my runs at home in the woods, but running through the mountains was a completely different experience that concreted my hopes for moving out west when I’m older.
- Ellie and I found these awesome gluten-free wraps at a little natural foods grocery store and we made some kickin avocado, bacon, and tomato wraps for dinner last night. This was a big moment for me because, if you’re gluten-free like I am, you know how hard it is to find quality replacements. And let me tell you, these wraps were ah-mazinggg!

The leaves were so vibrant and it was so chilly. The perfect combination. It even snowed one day!
Anyway
This week was super productive because I was working alongside Ellie every day. The power of working with someone else who has a full-time job was crazy. I had a feeling I would be more focused this week but I didn’t realize just how productive it would be.
I finished a good amount of guest posts and blog posts and was able to complete some interview questions for a potential feature.
Even though I didn’t necessarily get a super-duper amount of work done, the difference was in the amount of quality time I put into work vs. time just spent procrastinating and distracting myself.
Typically, after I sit down to begin a day of work, I end up getting distracted like every 20 minutes. I get a text, I get hungry, I decide I need a mental break. The list goes on. But this week, working with Ellie, I was able to sit for a solid 3 hours of uninterrupted work.
It was great because I was able to get my work done faster and still have time for other activities, like hiking in the late afternoon. I definitely learned the power of working collaboratively this week, as every time I felt like I wanted to take a break I would see Ellie working and decide to power through instead.
Hopefully, I can take that into next week, as I go back to working by myself from home. Even though I won’t be held accountable in the same way, I hope this experience has at least reminded me of how good it feels to get my work done and be able to move on to other things.
